Cajun Style Red Beans and Rice

Ingredients

  • 1 bag red kidney beans

  • 1 pound andouille smoked sausage

  • 1 bell pepper, chopped

  • 1 medium onion, chopped

  • 1 clove garlic, chopped

  • 1/4 stick butter

  • 8-10 cups water

  • 2 tablespoons parsley

  • cajun seasoning

  • salt

  • pepper

  • 1 cup long grain rice

Directions

  • Rinse beans and set aside.
  • Slice sausage into small strips, about 1/2 of an inch thick.
  • In a heavy pot, add a splash of olive oil and sausage. Cook for 5 minutes.
  • Add bell pepper, onion and garlic to the mixture. (Be sure to stir!)
  • Then, add beans, water and the bay leaf. Bring to a boil and then reduce to a simmer for 1 to 1 1/2 hours, stirring occasionally.
  • Add parsley, salt, pepper and cajun seasoning.
  • For the rice, add one cup of rice to two cups water. (Be sure to salt the water.) Bring to a boil and then reduce to simmer. Cover and let simmer for 17 minutes.
  • Laissez les bon temps rouler!
