Cajun Style Red Beans and Rice

1 bag red kidney beans
1 pound andouille smoked sausage
1 bell pepper, chopped
1 medium onion, chopped
1 clove garlic, chopped
1/4 stick butter
8-10 cups water
2 tablespoons parsley
cajun seasoning
salt
pepper
1 cup long grain rice
Directions
- Rinse beans and set aside.
- Slice sausage into small strips, about 1/2 of an inch thick.
- In a heavy pot, add a splash of olive oil and sausage. Cook for 5 minutes.
- Add bell pepper, onion and garlic to the mixture. (Be sure to stir!)
- Then, add beans, water and the bay leaf. Bring to a boil and then reduce to a simmer for 1 to 1 1/2 hours, stirring occasionally. Loading gallery media…
- Add parsley, salt, pepper and cajun seasoning.
- For the rice, add one cup of rice to two cups water. (Be sure to salt the water.) Bring to a boil and then reduce to simmer. Cover and let simmer for 17 minutes.
