Beef Stroganoff

1/2 cup onion, chopped
1 clove garlic, minced
1 cup mushrooms, sliced
4 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons ketchup
3/4 cup beef broth
1 cup sour cream
1-2 pounds fajita meat
egg noddles
Directions
- Saute onions, garlic and mushrooms in butter in a large skillet. (I like to use a Dutch Oven.)
- Coat steak strips with combined flour, salt and pepper mixture.
- Brown beef over low heat in skillet. Then, return mushroom-onion mixture to skillet. Stir in ketchup and broth.
- Cover tightly and simmer for one hour, adding more broth if necessary.
- Add sour cream and heat throughly.
- Serve hot over egg noodles.
Notes
- You can also use Sirloin steak instead of Fajita meat. (I use the latter, because it comes pre-sliced and it saves me some time in the kitchen.)
